It really chaps me.  I see them all the time.  Not all my friends are chefs and that is fine.  But!  Those silly share this on your timeline recipes (that are usually with yum, must try this) generally are garbage.  99% have open a can of soup or box of….

Certainly I read them.  Just because they are such train wrecks!  No editing is done.  Ingredients listed are not included in the directions, the photo does not match the recipe.  Saw one yesterday that was chicken  with alfredo sauce over wide egg noodles.  The picture showed fettuccine pasta (technical foul) with corn (not listed in the ingredients) and the meat?  Sliced pork loin.  The sauce directions were, melt butter, add 1/4 C parm cheese, 1 Ccream, and whisk until smooth (nope, not gonna happen) then add TWO crushed cloves of garlic and 1/2 C of mozz, stir till smooth.  It was also quite clear in the picture there was cream of mushroom soup involved.

For sure I have made errors in my blog posts but SERIOUSLY!

How it SHOULD Work

Recently a local foodie talked about how Chef’s eat at each others restaurants.  Well DUH!  If you are only eating in your own restaurant what is the point?  Example, Chef runs a well known sushi restaurant but likes to eat steak too.  The sushi person knows how to do a steak but why not eat at a good steakhouse?  It is not just the food.  The atmosphere and vibe in each non-chain restaurant is different for each place.

I am a savory chef.  I can do baked goods but I really don’t get much pleasure from it.  I generally buy from a local baker that enjoys doing pastry.  It shows in the product.

In short, if the chef is meh on doing certain types of cooking, it is very apparent in the quality of the food.

Confusing events

So, something stupid a person said 30 years or so ago will make a business crash and burn.  One would think that the woman committed war crimes.  On the other hand, an actor goes on a rant and it is considered meh, so what.  REALLY?

I suppose it just shows how some folks just have failed to evolve.  Pity really.

Proper service for BBQ, Crawfish, Shrimp and Lobster boils

There are no plates used EVER!  BBQ is served on butcher paper with slices of white bread (has to be white bread) with pickle and onion slices.  Several stacks of napkins or paper towels are placed around the table.  Optional sides are cream corn, beans,  mac n cheese,  in paper cups with a plastic spoon.

For the boils, there is the option of serving on beer trays or a table covered with newspaper and the food is dumped in the middle.  Again with the paper towels and napkins.

A nice touch in both cases is cold beverages and wet naps.  Unless weather is not cooperating, eat outside.

All three are really ment to be served at community tables.  Make a new friend.  Re-connect with a family member.
